When legendary Chef Tom Colicchio came to us with a request for the perfect Roasting Pan, we got straight to work. He had three problems with other roasting pans: moisture loss, ingredients stuck in corners, and uneven browning.

We immediately knew Carbon Steel was the answer. It combines the heat retention of cast iron with the control and maneuverability of Stainless Clad, resulting in a natural non stick alternative that can seamlessly transition from stovetop searing to oven roasting. Its rounded edges and straight, high sides ensure your roasts are tender, juicy, and always crispy. Size-wise, our Roasting Pan comfortably fits a 12-pound turkey, and is large enough for caramelizing to take place but compact enough to make stovetop pan sauces.
